White Cauliflower:

White cauliflower is a super versatile veggie with a dense, creamy-white head made of tightly packed florets. It has a mild, slightly nutty flavor that gets even better when cooked. Raw, it’s crisp and crunchy; cooked, it turns tender and a little creamy. You can toss cauliflower into just about anything: roast it in the oven, sauté it, fry it, steam it, or add it to soups, pastas, and stir-fries. It’s also great mashed, puréed, or chopped into “rice” for quick bowls and weeknight meals. Cauliflower takes on flavors easily, pairing well with warm spices like cumin or curry, and with cheeses like cheddar or Parmesan.

Collards:

Collard greens are earthy and slightly bitter when raw, but once cooked they mellow out and become tender and savory. They can be eaten raw in salads or slaws, though they’re usually cooked to soften their texture and flavor. Collards are super versatile and work well in soups, stews, casseroles, omelets, pasta, or braised dishes. Their earthy, vegetal flavor pairs well with acidic, salty, and sweet ingredients!

Red Dragon Carrots:

Red Dragon carrots have a bold, sweet flavor with a subtle spiciness. Roasting deepens their natural sweetness, while steaming, sautéing, or stewing keeps them tender and flavorful. Their taste is richer and more complex than that of a regular carrot, making them especially great for baking or desserts. They also work well in soups, curries, risottos, rice dishes, and puréed into sauces or spreads like hummus.

Sifra Potatoes:

This Dutch variety is a favorite among both farmers and chefs for good reason! With a light yellow skin and creamy white flesh, Sifra potatoes are known for their distinct buttery flavor and velvety texture. They're incredibly versatile. Perfect for whipping, roasting, boiling, or steaming. Though their rich, creamy flavor really stands out in soups.

Arugula:

Arugula has a bold, peppery flavor with a noticeable bitterness that sets it apart from milder greens. It’s sharp, with subtle mustardy and nutty notes that add depth, especially alongside rich or savory ingredients. Arugula works well both raw and cooked. Use it in salads with olive oil and lemon, blend it into pesto, scatter it over pizza, or layer it into sandwiches and wraps. I recommend you lightly sauté it with garlic and olive oil, the leaves  will soften while still keeping that signature peppery kick!
